Ceramic knives are a great addition in any kitchen. While they are more expensive than your average steel knives by a significant margin, to me they are well worth it many times over. One of the benefits of ceramic knives is that they almost never need to be sharpened. This is because they are sharpened at the factory to be razor sharp and because the material they are made from is so incredibly hard and durable it resists getting dull. The ceramic that is used in making kitchen knives is actually a kind of Zirconia, which is similar to what they make some lower cost jewelry out of. That is actually cubic Zirconia, which is a slightly different variation of a similar material. Ceramic knives are more difficult to sharpen however when they do need it and most people just take them to a professional to have it done on those rare occasions.
